    What I've been doing instead of blogging.

    As I've mentioned before, this is a busy time for all of us at Lehigh. For South Mountain College, one of our major projects was to produce a book based on the theme of "where and how we live."
    Our deadline was this past Monday.
    The great thing about the way the South Mountain College is structured is that the 6 co-authors (all students) were allowed to write, edit and produce the book entirely on our own. So yes, that means we had to find a publisher and go through 100,000 read-throughs and copy edits before submitting it. But in the end we learned a whole lot more about . I'll share more of my experiences with writing it later.
    As layout editor and graphic designer for the book, I was in charge of turning the text into a format for publishing, as well as design the cover.Our book will be officially released in about 3 weeks. Look for it on amazon.com(!) Until then, here's the cover design:

    Lehigh vs. Kansas - showdown of the century!

    So, great basketball seasons for Lehigh's men's and women's teams has netted(ha!) great results: both teams are in the NCAA tournament! 
    Everyone around campus is elated, and nobody on campus thinks that we will lose. Less than a few hours after the selection show, students had already organized a bus to support our men's team in Oklahoma City. For only $168 RT, you can hop on a bus tomorrow and see the game on thursday night. Yes, you'll be missing 3 days school, but considering Lehigh has only made 4 NCAA appearances since the tournament's inception, this may be the only time you'll ever get to experience it as a college student. 

    Finally, to quote CBSSports' Drew Franklin,
    A 16-seed has never advanced to the second round in the NCAA Tournament.  However, this is the year Goliath goes down.   
    You heard it here, folks.  The Mountain Hawks are wearing their upsets shoes to the big dance.

    What do I come back to?

    After dropping off the blogosphere radar for about 10 days, I'm back. 
    Lehigh's spring break is designed to be exactly halfway though the semester. The first half of this semester was tough. However, in good old Lehigh fashion, the second half of the spring semester is always killer. Every class piles on the work, every club schedules events, and it seems like every prospective family on earth descends on Lehigh's campus. Combine that with the lack of motivation that ensues with "spring fever" and we're in for a rough couple of weeks.

    So what do I have planned over the next month or so?
    -Projects, projects and more projects. 
    -Tours. Admissions is kicking off the spring frenzy with a massive open house for juniors this friday. Feel free to join my tour at 12:00.  
    -Lots of admissions-related events. Yay! Free lunches, a few free breakfasts, panel discussions, and private tours. If you are doing the VIEW Lunches, I'll be there on mondays and wednesdays. 
    -Event planning for various spring events. 
    -Watching the Mountain Hawks play in the NCAA tourney!

    Almost 1 month to the day since my blog overhaul, there have been 1,000 site views.Sadly, I have yet to meet the viewership of my favorite news site, Drudge Report (772,508,378 views per month). Oh well.

    Mario's Favorite Foods - Part 1: The Chicken Cabo Salad

    In a new series I'm going to call "Mario's favorite foods", I will be highlighting the best foods at Lehigh University and the Bethlehem Area.
    You may have heard me talk about my favorite foods on my campus tours (the grilled cheese, the banana-bourbon french toast...etc) I thought i'd collect all my Lehigh Valley favorites in one place.
    The first addition to the list is the Chicken Cabo salad.

    Where can you find this delectable entree?
    - Upper UC (Salsa Rico, 2nd Floor University Center)

    The breakdown: What's inside?
    from bottom to top:
    -Tortilla chips
    -Black beans
    -Grilled chicken
    -Pepper Jack and Cheddar Cheese
    -Lettuce
    -Pico De Gallo
    -Mango Guacamole (yes, mangos and guacamole. fresh. in the winter. In pennsylvania.)
    -Sour cream
    -Lime
    -add your choice of salsa as dressing (I prefer corn and chipotle salsas)

    Whenever I walk into the Upper UC's food court, I head straight for 1 of 2 delicious items:1. Sushi (more on that in another feature)
    2. The Cabo salad.If you happen to be visiting feel free to take advantage of this delectable salad.
